Blind assessment: Finely balanced aroma; delicate fruit and floral notes are complicated by toast and caramel. In the cup bright fruit-toned acidity, lightly syrupy mouthfeel, and a soft orangy citrus with hints of flowers and stone fruit carrying into a gently rich finish. 

 

Who should drink it: Classically balanced, sweetly fruit-toned Guatemala cup.

Blind assessment: A balanced and rather complex ultra dark roast. Intense, deeply smoky aroma, dominated by a charred wood character. By contrast the cup is relatively delicate and smooth with a lightly syrupy body and a gently charred cedar that, with patience, rounds toward caramel. Clean, richly roasty finish.

 

Who should drink it:  A sweet, smoky, smooth version of an extreme dark roast.

Blind assessment: Dark chocolate, aromatic wood and an apricot-like fruit run through the profile from aroma to finish. Fat body, impressive balance and sweetness. A hint of woody astringency surfaces in the otherwise flavor-saturated finish. Maintains its chocolate and aromatic wood presence well in milk.

 

Who should drink it: Best as a straight shot, where its classic balance of aromatic wood and chocolate is clearest and most expressive.
